This is a response to the mystery fireplace in the 1890 Victorian "Braemar" kitchen. I'm a restoration and preservation architect in Ky. I lived in New England for a while and saw a few Victorian kitchen ranges built into the chimney mass. In old advertisements they were sold as "range fronts". The range consisted of a range top and ovens that were mounted into a cast iron frame. I believe the homeowner has the masonry mass that held the range.
